In the https: scheme, you'd just have to be sure to save a copy of the
Web page on disk.  That's just as much (or as little) proof as an electronic
copy of an e-mail.

Still, I don't use e-mail for anything that I expect might need to
be legally binding.  Paper only for me in that case. :-)
