[Mimedefang] OT: Anyone here use Dovecot imap server in production environment?

No, but I'm using it with a handful of users and I'm a heavy IMAP user, 
with lots of 2000+ message mailboxes in my mailing list tree. It's far more 
responsive than UW-IMAP, even with its mbx format. I'm using the version 
shipping with Fedora Core 2. I have my mailboxes in mbox form under ~/mail. 
When changing to Dovecot, I had to edit a line in /etc/dovecot.ini to set 
the hierarchy root:

default_mail_env = mbox:~/mail:INBOX=/var/spool/mail/%u

(There's a bunch of other stuff to tweak, but this one isn't quite so 
obvious.)

I also had to change my clients to look in the "root" of the server's 
hierarchy instead of in the mail subdirectory, as UW-IMAP defaults to 
publishing one's home directory as the root. For Mulberry, I changed my 
"Check Favorites" cabinet to use "*:*" instead of "*:mail" as the "wildcard 
item" to check for new mail. (I deliver stuff via procmail directly to 
subfolders, so Mulberry needs to be told to check locations other than 
INBOX for new mail.)
