This is the solution to the problem, however it was also complicated my the
fact I was trying to scan for viruses with uvscan. This would cause plenty
of errors and timeouts. What would be the suggestion for an AV software,
that's preferably OS?

   Are you sure that's MIMEDefang generating that error?  It looks like a
sendmail error.  It probably wants for root to own /var and /var/spool and
not have any group write permission.  Your defang user needs to own only
/var/spool/MIMEDefang.
