ML,

Generally speaking.  What you are looking for is a method to direct the 
Local Mail.  Local Mail is generally directed using a agent such as 
Procmail.

Procmail is generally defined in the MC configuration file for Sendmail 
Configuration.  I use the Headers which are created in the MIMEDefang 
utilities to detect the presence of SPAM or Email.  You amy also choose 
to rewrite the Subject line, depending on whether or not you want the 
user to be able to view the Status of the Scanning.

By default, the delivery of Local Email is specified to be directed to 
the local users mailbox.  You can redirect the delivery of email to 
various files within the Domain of the User's control, however they will 
only be usable for the user if they are connecting to the server with 
the IMAP Protocol.  Please see the procmail and imap documentation for 
more information pertaining to the location of user Mailboxes, as well 
as folders which be retrieved using these protocols.
