The docs are wrong.  On an IPv6-enabled system, $RelayAddr can be an
IPv6 address (represented as a string.)

MIMEDefang fully supports IPv6.  Our Hosted CanIt cluster (with MIMEDefang
at its core) runs dual IPv4/IPv6 traffic in production.
