Your long-time load average is not that bad.

You currently have running 15 MIMEDefang processes in parallel, when they 
really hit SpamAssassin at the same time, it will get hard.

Do you use SpamAssassin v3.2.x (I don't know the correct version) with 
pre-compiled rule sets? I have heart it will drop the load for all simple 
regex.

OK, swap would be the next thing I had ask about, but none is used.

I guess, you should follow David's advice and verify if SpamAssassin is 
computing (checking rules) or doing external stuff.
