On Unix, since MIMEDefang is a pre-fork program, each fork can run on a
different processor automatically.  This is assuming you have an SMP
kernel of course.

When you run top, it should look like (if it doesn't, try pressing '1'
(number 1) to toggle individual CPU stats).
