If you assign a second IP address and name to your mail server
(possibly using a virtual interface), and publish it as a secondary MX
record, then the delay introduced by greylisting will be minimal, as
legitimate mail servers fall back to the secondary MX.

This assumes, of course, that you don't impose a "quiet time" between
retries.
