Depends on where/when you do this.

Normally you do it when delivering mail to a mailbox. This way the 
only address put in the envelope header is the adress that resulted 
in the mail beeing delivered to that specific mailbox.

If you do the same thing earlier in the chain, for example in a mail 
gateway or when receiving mail (as opposed to delivering locally), 
you'll expose BCC's unless you use a mechanism like stream by 
recipient.
