You should set your TTL on the MX records low, like 5 minutes.  Then wait
your default TTL, normally 24 hours.  Might wait 72 hours just in case.  
You'll see the MX DNS traffic increase during this time. Then make the MX
change.  Theoretically, the change should be propagated everywhere within 
5 minutes.
In reality, it doesn't always happen like that, or i don't understand DNS.
Another thing we did was, at our linux firewall, redirect all port 25 
requests destined for the old mail server to the new mail server.  Worked 
like a charm.
