I used it for exactly the same reason with a fairly stock/example
mimedefang filter. Something like:

all_spam_to  offers at mydomain.com
in /etc/mail/spamassassin/sa-mimedefang.cf
should do what you want. Or perhaps
whitelist_from mysender at mydomain.com
